The Spanish Xarel.lo (pronounced sha-rel-lo) grape is traditionally used in the production of Cava but it’s red-skinned cousin takes centre stage here with a delightful wine made using the “Brisat” process, a Catalan term meaning extended maceration. Extra time on skins allows for greater extraction of natural flavours, aromas and tannins and minimal intervention thereafter means what goes into the glass expresses exactly what came off the vine. Flavours of spiced apple and fennel seed abound with just enough acidity to keep things in balance. We’ll be drinking this all summer long with goats cheese or brie with a drizzle of honey.

About the Winemakers
Maria Barrena + Josep Tort

Oenologist Maria Barrena has been making wine for eleven years with her partner, the vintner Josep Tort. He is the fifth generation of winegrowers, but the first to make wine.

They are located in Arboç, in the Baix Penedès - the Catalonia wine region in Spain, and their wine production is named Entre Vinyes. Penedès is renowned for its production of Cava among other well-regarded wines.

"We have very old vines in pots, between 80 and 100 years old. My father doesn't remember seeing them planted. They are a heritage of humanity and give meaning to a territory where you can breathe calm. They tell us about another Penedès", sums up Tort. They make wines with regenerative viticulture – creating fertility in the soil and preventing erosion – and minimal intervention in the cellar.

"We want to safeguard the past and make it last through winemaking. We preserve the gestures and learnings of previous generations in the vineyard", comments Barrena.
