The Spanish Xarel.lo (pronounced sha-rel-lo) grape is traditionally used in the production of Cava but it’s red-skinned cousin takes centre stage here with a delightful wine made using the “Brisat” process, a Catalan term meaning extended maceration. Extra time on skins allows for greater extraction of natural flavours, aromas and tannins and minimal intervention thereafter means what goes into the glass expresses exactly what came off the vine. Flavours of spiced apple and fennel seed abound with just enough acidity to keep things in balance. We’ll be drinking this all summer long with goats cheese or brie with a drizzle of honey.

Maria, also a co-founder of Azul y Garanza, brings experience and a commitment to sustainable practices, while Pep, a third-generation grower in Penedès, provides an intimate understanding of the land. Their work is guided by intuition and respect for nature, producing wines that highlight the region’s old vines and thriving ecosystem. The birds featured on their labels symbolize their dedication to fostering a balanced vineyard, where biodiversity naturally enhances vine health.
