A classically styled Adelaide Hills sparkling made the old-fashioned way. This traditional method Pinot Noir–Chardonnay blend leans bright and energetic, with 75% Pinot bringing shape and depth, and the remaining Chardonnay keeping things nice and fresh. It opens all crunchy and fresh... green apple with a bit of dew still clinging to it, before soft white florals and a gentle poached pear note start to unfurl. There’s a subtle savoury whisper underneath it all, just a hint of toast and nuttiness from time on lees and the finish? Pure lemon cheesecake vibes. A joyful sparkling to say the least!

Wine Description
Are you ready to feel the true energy of Bairrada? This rose-red, slightly wild sparkling is made the traditional champagnoise way (a method Bairrada’s been playing with the 1890's), using homegrown Baga (the region’s beating heart) with a splash of Fernão Pires to keep things lifted and fizzy. Fermented in stainless, then sent to bottle for its second ferment, it pours cloudy and chalky, giving ample cranberry, strawberry and rose hip from the first whiff... a little peach and mango too, with a high acid zip, and a sherbetty, Aperol-spritz-adjacent fizz that makes it borderline dangerous. Crunchy and refreshing as hell.

A bright, classic Clare Valley Riesling made with a light touch. The fruit comes from 19-year-old vines in the White Hut sub-region, sitting high at 500 metres on loamy Terra Rossa soils. Clean and racy without feeling sharp, there's plenty of zesty green apple and tart citrus to start. As it opens, there’s more depth than first meets the eye... preserved lemon, mandarin, zingy pink grapefruit. The texture is sleek but present, finishing long and dry with a soft, talc-like grip that keeps things beautifully balanced.

A textured, expressive Roussanne from the wind-swept, rugged vineyards of Breedekloof in South Africa. Somehow balancing freshness and depth in equal measure, it shows off what slow ripening in tough soils and big temperature swings can do. The nose and palate are fragrant and layered... orange blossom, citrus zest, jasmine and spice, wrapped in subtly pithy, almost waxy undertones. Full-bodied but dignified, there’s grip without heaviness... aromatic, textural, all-round inviting.

Brisk with a bitter–herbal edge, there's loads of freshness and grip. Unpolished and moderately chaotic, excellent times guaranteed!

A beauty, this one is all strawberries and cream, with a splash of rosewater on the nose. The palate is crisp... ripe raspberry, pink grapefruit, ample texture to stop it feeling thin. Dangerously quaffable!

Suzi Hilder confidently heads into whole-bunch, reductive territory with this is 2023 Pimpernel Trousseau... a juicy, no-fuss red that’s all about drinkability with a bit of wild allure. Cherry-red and lightly murky in the glass, it’s bursts with strawberry, cherry and red apple, plus stewed rhubarb, rose and fresh herbs. There’s a nice stemmy twang and a touch of stalky tannin that keeps things interesting, but nothing heavy... everything is nice and light.

Spätburgunder from Ingelheim, isn't that fun to say? Shaped by ancient limestone soils laid down some 50 million years ago, this is a grounded and graceful Pinot. Savoury and autumnal from the start, it moves through wild herbs, forest floor and a soft smoky note before red and dark cherry fruit comes into focus. The palate is restrained, with a depth that never weighs things down. It’s long and slightly earthy on the finish.

The tannins are velvety, the acidity is bright and light on its feet, very moreish.

Lots going on here, and lots to love. The 2024 vintage was hot, fast and full throttle in Margaret River, and this Cabernet Sauvignon–Merlot absolutely wears it. No rain, loads of sunshine, early harvest. Deep mulberry and purple hues in the glass, then straight into ironstone, cigar box and dark berries, with flashes of sage, capsicum, violets and rose drifting through. Savoury but The palate flows between blackcurrant and dark chocolate to cedar and sandalwood. Fine-grained tannins keep everything nice and tight. Bold but balanced and built to cruise for years if you feel like tucking a bottle away.
