The ‘Origami’ Rosé is an expressive, cross-regional blend of Sangiovese from Clare Vally, Grenache from Riverland and skin-contact Pinot Gris from the Adelaide Hills. Lightly copper-hued and full of freshness, it opens with aromas of pink lady apple, guava, salted lemon and tart cranberry. Bright and floral and, finishing bone-dry with a distinct line of acidity and a silky, subtly grippy texture. Crunchy and clean, perfect for sunny days and seafood… It's as Unico as a rosé can be.

Laura + Brendan Carter | Unico Zelo

Brendan and Laura Carter are the driving force behind both Unico Zelo and Applewood Distillery, a duo known for their boundary-pushing approach and passion for the Australian landscape... driven to celebrate lesser-known varietals, diverse soils, and native ingredients that speak to place and identity. Curious, collaborative and always evolving, they approach each wine with a fresh lens. Origami is the result of years of playful experimentation, blending Sangiovese (usually destined for their beloved ‘Truffle Hound’), Riverland Old Vine Grenache they’ve long admired, and a splash of skin-contact Pinot Gris for that copper shimmer and extra lift.

Unico Zelo is one of the most exciting voices in modern Australian wine,  a label built on minimal intervention, maximal curiosity, and a firm belief in wine for the people. Based in the Adelaide Hills since 2014, Unico Zelo have carved a name for themselves championing lesser-known grapes and underdog regions, always with a focus on flavour, texture, and drinkability. Their B-Corp classification cemented them as a winery with purpose, and we’re for it.
