Delicate white flowers blend effortlessly with lemon curd, toasty shortbread and white nectarine. The palate is elegance defined, with a long finish of fresh cream and preserved lemon. ‘Bis’ is French for ‘the space in-between’, which encapsulates the process and inspiration it took to make this exquisite non-vintage blanc.

In the cellar, Bellebonne follows traditional méthode champenoise practices—hand-picking, whole-bunch pressing, extended lees ageing and minimal dosage—crafted with precision and restraint. The wines show remarkable poise and detail: crystalline acidity, fine bead and savoury depth balanced by elegance and length.

Natalie Fryar | Bellebonne

Natalie Fryar, aka Australia’s Sparkling Queen, has spent her career chasing the perfect bubbles, and she’s nailed it with Bellebonne. After 14 years helping Jansz become a sparkling powerhouse, she struck out on her own in 2015, determined to make Australia’s finest sparkling. Can confirm, she has succeeded! Every bottle Nat crafts is all about Tasmanian fruit first: bright, precise, elegant, and with just enough depth to keep you coming back for more.
Natalie’s journey started young, at just 14 years old with school work experience at Hardys... two years later she was already working her first vintage. Since then, she’s worked across Australia and the world, but it’s Tassie that stole her heart. Beyond Bellebonne, she’s also co-founded Abel Gin, consulted for labels like Pipers Brook and Ninth Island, and helped shape the Australian Cuvee Centre. But at the core, it’s all about community, passion, and letting the island’s magic shine through.
