Wine Description
A pink-orange shimmer, like pressed petals held up to the sun. Ample lift, and not just from the pétillance... this is desert-fringed Ningxia (China!) in a glass... high plains sun, cool desert nights...but what really sets this 'pét-nat' apart is what’s quietly threaded through it: rice wine. You don’t see that every day. In fact, you almost never do. Chardonnay takes the lead here, grown lean and mineral in the foothills of the Helan Mountains. 20% Pinot Noir lends that beautiful juicy red fruit... And then - the curveball: rice wine, folded in to spark fermentation and bring its own texture, a wild and nutty salinity. Notes of honeydew and brown pear on the breeze, banana flower and cereal grain in the undertow. A rice husk-like cereal depth with some spice and earthiness.

Wine Description
Bright Hunter Semillon (100%)... she's full of fresh, zingy texture yet still charmingly rustic. Lemon splice, sherbet, salinity... and that soft sparkle we love in a good natural fizz. Lo-fi with nothing added, this beauty really does taste like summer in the Hunter (and in Winter? Even better).

Wine Description
Like a spicy little Riesling with more grip and glow. This Grüner is zesty, textural and distinctly savoury... all green pear, crushed granite and a salty lick of sea spray. There’s citrus peel bitterness in the best way - preserved lemon, cumquat, a little alpine herb and vermouth energy. Grown on the windswept coast of Mount Benson, fermented on skins for 3 days to draw out texture and phenolics, then aged on lees in old oak for three months to round it all out. Begging for snacks.

Wine Description
A Chenin Blanc like you’ve never met before. This third edition of 'Silence' brings together flor-aged wines from 2020–2023...Think stewed yellow apples, ripe bosc pear, pickled ginger, and leesy sourdough on the nose. The palate is layered and creamy, with apricot and yellow apple, a subtle buttery-toffee thread, and a playful weave of cinnamon and ginger spice. Punchy acidity and a saline finish keep it nice and taut... 'Silently' growing in nuance with every release. I just love it.

Wine Description
40yo non-irrigated Verduzzo vines, a native of NE Italy and a rare vinous treasure in Australia. Allowed a 14-day whole-bunch maceration before pressing and maturation in mature French oak barriques for 8 months on lees to build texture and integrate its phenolic structure before bottling without fining or filtration.

Wine Description
Juicy and utterly joyful, made with whole-cluster Gamay from 60-year-old vines grown on pink granite soils in Saint-Joseph. Vibrant... crunchy, full of ripe raspberries, a tinge of sour cherry, and soft spice. Look out for pink peppercorns and florals... violet maybe. Fermented with wild yeasts and macerated gently for eight days, it's then aged in concrete to preserve its purity.

Wine Description
An ode to the old-world habit of making liqueurs and amari from what grows around you. Rose Kentish captures local abundance at Full Circle Spirits—foraged botanicals like herbs, citrus, fruits and roots—so the drink on your table naturally complements the food beside it. When the same plants flavour both kitchen and glass, the whole meal just makes delicious sense.
Bright lime-green in the glass (hello, chlorophyll). Pine-lime splice notes lift with a shimmer of pink peppercorn; the palate is creamy-soda, sherbet-like and herbal—rosemary, thyme and bay leaf—with a rich, earthy bitterness underneath. The finish is long yet lightly refreshing, leaving the palate ready for another sip.
Serve
• Over ice ~ 30 mL at the end of a meal, or between courses to reset
• Spritz ~ 50 mL in a wine glass over ice, top with soda; garnish with your favourite garden green herb
