The 2019 Sferra Cavallo is the wildest, most bare-knuckled expression of Aglianico. Taking its name from the old Murgia tracks so rocky they were said to pull the shoes off horses... this wine charges forward with the same feral, earthy, free-running spirit. Born in the warm winds and limestone soils of the Alta Murgia, this is Aglianico raised the Morasinsi way... fermentation kicks off on its own in concrete, then the wine rests for 20 months across concrete, amphora, and old barrels... unfined, unfiltered, and totally unpolished. In the glass, it’s all dark cherry, wild herbs, potpourri and dusty stone... structured but gentle, with tannins that feel like a firm handshake rather than a punch. It’s honest, elemental, and deliciously alive.

Sveva Sernia | Agricola Morasinsi

At the foot of the Alta Murgia, Sveva Sernia has quietly built something special. On their 10-hectare family farm and winery, Morasinsi, she and her partner Peter are shaping a project rooted in regenerative agriculture and respect for the land. Sveva grew up in a farming family and always knew she’d work with nature; wine simply became the most honest way to tell the story of her place. Morasinsi’s mission is two-fold: protect biodiversity and prove that good, thoughtful farming can strengthen both community and culture. Everything here is done using indigenous varieties, spontaneous ferments, hand-picked fruit, and in a cellar built around natural materials like concrete, old barrels, and amphora. It’s living wine, shaped daily by its ecosystem. Their vineyards sit alongside a thriving food forest, vegetable gardens, and roaming chickens, all part of a broader vision to create resilient, productive land in a changing climate. Each bottle Sveva makes is a clear, unfussy snapshot of the Murgia: rocky soils, wild herbs, and bright southern light.
