High on the slopes of the Olifantsberg mountain in Breedekloof, Elizma Visser farms in a place that doesn’t give much away. Wind is constant, rainfall scarce, and the soils are rocky and lean, with shale, schist and clay layered beneath. Elizma has been at Olifantsberg for nearly a decade, overseeing viticulture and shaping farming strategy, working with native varieties planted at altitude and trained using high-density eschalas to temper heat and preserve freshness. A thoughtful and practical approach that's designed for longevity rather than yield. In the cellar, the same restraint applies... fruit is handled gently and intervention is minimal. In 2021, Elizma was named Tim Atkin’s Young Winemaker of the Year, the first woman to receive the title.
