About the Winemaker
Adair Imrie | Wine by Adair
Adair Wines is a one-woman operation based in Mudgee, NSW, making natural wine the slow, honest way. She hand-pick grapes from local vineyards and work with nothing but native yeasts, minimal sulphites, and a deep respect for the fruit. No oak, no shortcuts—aged in glass demijohns and stainless steel, in the spirit of traditional Italian winemaking.
Adair Wine is totally off-grid The farm runs on solar power and spring water, handmade from the ground up. The result: bright, fresh and fruity wines; old-world character under the new-world sun. Ludo, Adair’s rescue Greyhound, graces every label as the quiet heart and patron saint of Adair Wines.
