A very special Méthode Traditionnelle sparkling made from Pinot Noir with a splash of Adelaide Hills Chardonnay. This wine is composed of multiple vintages – 49% comes from the 2023 vintage and the remaining 51% is made up of precious reserve wines from 2022, 2021, 2012 and 2004! The colour comes from the saignée method, giving it that gorgeous rosé hue. On the nose it's all subtle strawberry, quince, citrus and a salty whip of an ocean sea breeze, whilst the palate bursts with wild raspberry, violet and cherry. It’s dry and complex, with refreshing acidity, a soft mousse and a long, crisp finish. Disgorged by hand, on demand (yes, really), so the wine stays in contact with the lees for as long as possible. A gorgeous pink fizz indeed!

About the Winemakers
Jane Bromley + Hylton McLean | Honey Moon Vineyard

Jane Bromley and Hylton McLean are the dream team behind Honey Moon Vineyard. Together, they bring a ridiculous combo of passion, knowledge and warmth to their winemaking. Hylton is a winemaker, wine educator and all-round sparkling specialist. He’s held senior winemaking roles at big-name wineries, and used to teach Oenology at the University of Adelaide and Roseworthy. These days, he still teaches wine appreciation and sensory courses – and makes fizz with serious finesse. Jane fell in love with wine during her first Adelaide Hills vintage in 2001 and never looked back. She has a deep love for Champagne and French sparkling, and in 2002 she won the Vin de Champagne Award. She also received the Diploma d’Honneur Corporation des Vignerons de Champagne in 2009 – pretty amazing. She now splits her time between winemaking and wine education, with a focus on all things sparkling. We love her work!

Honey Moon Vineyard is a tiny, hands-on winery in the high ridges of Echunga, Adelaide Hills – a proper hidden gem run by Jane Bromley and Hylton McLean. It’s named for the golden full moons that rise over the vineyard during harvest (yes, it’s as dreamy as it sounds). At 420m altitude, their 3-acre site grows Pinot Noir and Shiraz without herbicides and with lots of care. Everything’s hand-picked, gently handled, and made onsite – from elegant fizz to bold reds and the occasional fortified, while their sparklings are cuvée only, bottle-fermented, aged on lees, and hand-disgorged. Small scale, loads of detail, and full of personality – just like their vineyard dogs, Miss Billie and Mr Bertie.
