This is as far from a Hunter Valley Shiraz as you can get! A blend of fruit from two parcels - Broke + Pokolbin. One was direct pressed to oak, and the other went through carbonic maceration before being basket pressed to stainless steel. The result ~ a light, silky thirst-quenching chilled red, with depth and purity.

About the Winemaker
Peta Kotz | Sabi Wabi

Peta Kotz is Hunter born and bred, and her label Sabi Wabi is all about reimagining the region she grew up in - with Semillon at the heart of it. She's seriously passionate about this grape and makes it in a way that's anything but old-school – think ceramic and neutral oak, skin contact, native ferments, all the fun stuff. Every wine she makes is lo-fi, small batch, and made by hand. Sabi Wabi takes its name from the Japanese idea of finding beauty in imperfection, and that totally sums up her vibe. She's part of the new guard shaking things up in the Hunter, and I'm a big fan.
