Hand-harvested in February 2019, pressed directly, settled overnight, and aged for 24 months before bottling in March 2021, this long, gentle élevage shapes its character. Despite the age and extended time on lees, it’s incredibly bright and fresh: fine, delicate bubbles carrying notes of lemon tart, shortbread, and toffee apple.
